Mokita Modi Parikh.

Recipe:
1 cup Besan flour, sift to aerate & to remove any lumps
1 cup ghee, melted & at room temperature
3/4 to 1 cup sugar - your wish
2 cardamom pods, seeds powdered


In a big sturdy pot, take one cup of water, add sugar and bring them to boil till the sugar syrup reaches one string consistency. Reduce the heat.Now pour the ghee and besan flour in a steady stream into the sugar syrup while stirring. You need an extra hand here. Continuously and thoroughly stirring, cook until the ghee starts to leave the sides of the pan and the mixture starts to thicken and turns to become porous and light gold in color. Stir in the cardamom powder.

Immediately pour onto a greased tray & evenly level it out with a spatula. When it is still hot, cut into diamond shapes. Makes about 10 to 12 pieces.

Hari Bhari Biryani

Ingredients:
· 6 Cloves
· 1 cup Ghee
· Salt to taste
· 3 Carrots, diced
· 2 Cinnamon stick
· ½ tsp Garlic paste
· 1 tsp Cumin seeds
· ½ tsp Ginger paste
· 1 cup Peas, shelled
· ½ tsp Chilli Powder
· 3 cups Basmati rice
· 3 tbsp Tomato puree
· 4 Onions, finely sliced
· 1 tsp Black Peppercorns
· ½ cup Coriander leaves
· 10-12 Cauliflower florets
· 1 tbsp Khuskhus, ground to a paste
· 250 gms Paneer, cut into small cubes

Method:
1. Wash and soak the rice for 30 minutes. Drain and put aside.
2. Dry roast the cinnamon sticks, cloves, pepprrcorns and cumin seeds. Grind to a powder.
3. Heat ghee in a wok, fry paneer, drain excess oil and keep aside.
4. Add onions, fry until golden brown, drain and keep aside.
5. Reheat a tbsp of ghee in a heavy bottomed vessel and add all vegetables (except paneer and onion), alongwith khuskhus paste, tomato puree, ginger paste, garlic paste, salt, chilli powder and the above roasted masala powder.
6. Saute for 5-7 minutes. Add half of the onion, followed by rice and 6 cups of water. Cover and cook until, rice becomes
7. Add coriander leaves, mix carefully, cover tightly and leave to simmer for 5-7 minutes.
8. Gently mix-in paneer, garnish with fried onions and serve piping hot.


Tip: Never stir rice while it cooks because it will crush the rice grains, releasing starch, and make the rice gummy

Grilled Egg Sandwich

Ingredients:
· 4 boiled Eggs
· 100 gms Butter
· 50 ml Mayonnaise
· 20 gms fried Onion
· 3 Green Chilli, chopped
· 8 slices Sandwich bread
· 1 Spring Onion, chopped
· 50 gms Tomato, chopped
· 50 gms Capsicum, chopped
· Salt and Black Pepper to taste
· Coriander leaves, chopped fine

Method:
1. Mix egg and all the chopped vegetables with mayonnaise, fried onion, coriander leaves and seasoning.
2. Butter the bread slices on both sides.
3. Put the filling on four slices and cover with the remaining four.
4. Grill on high till golden.


Tip: Always store eggs in their carton because eggs can absorb refrigerator odors
